You can do HDR photography with any camera that allows you adjust the exposure time. Although saying that it is easiest with a camera that supports bracketing (i.e. takes a pic at high, med and low exposure from one click).

After that you put the 3 (you can use more 5, 7...) images through Photomatix or sometimes photoshop to get those results
